You know, this stuff is really weird to someone who has grown up in South East Asia or I guess just Asia in general. Here, chili isn't a dish in and of itself. It's used as a sauce or condiment. It doesn't contain meat or beans, and only certain vegetables (such as garlic or sometimes coriander). The chili here is pretty much just the actual chili vegetable itself (different variants of it sometimes), chopped up and mixed together with some other basic sauces such as soy sauce, fish sauce or ground-up versions of another species of chili. We usually eat chili by dipping other foods into them, such as broiled/fried chicken, beef, soupy noodles, tofu etc.
